HACCP plan for restaurants, food production and retail
Anyone who produces, prepares, stores, transports or sells food must have procedures in place based on HACCP principles. We prepare a HACCP plan tailored to your business, train your staff and prepare you for inspections by the RÚVZ or the veterinary and food administration.
HACCP (Hazard Analysis and Critical Control Points) is the system a business uses to demonstrate that the food it serves or sells is safe. It applies to everyone who works with food, for example:
restaurants, bistros, snack bars, cafés and bars
school, workplace and hospital canteens and catering
food manufacturers, bakeries, confectioners and butchers
food shops including online sales
food warehouses and carriers
accommodation establishments that serve food
Small businesses: for simple processes the regulation allows simplified procedures and fewer records. However, HACCP must not be missing – it is simply adapted to the size of the business.

Under Section 28 of Act No. 152/1995 Coll. on foodstuffs. In addition to a fine, the inspection authority may also impose measures to remedy shortcomings.
Frequently asked questions about HACCP
Does a small snack bar, café or shop also need HACCP?
Yes. Every food business operator that produces, prepares, stores, transports or sells food must implement procedures based on HACCP principles (Article 5 of Regulation (EC) No 852/2004). For small businesses with simple processes the regulation allows simplified procedures, but the obligation does not disappear.
Who inspects HACCP?
The official food control authorities: the Regional Public Health Authority, mainly for restaurants, canteens and other catering establishments, and the regional veterinary and food administration, mainly for food production, warehouses and food retail (Section 21 of Act No. 152/1995 Coll.).
How often must the HACCP plan be updated?
Whenever a product, a technological procedure or any step of production or preparation changes, for example new dishes, new equipment or a different supplier. In addition, the system is regularly verified to make sure it works as written (Article 5(2) of Regulation (EC) No 852/2004).
Must employees be trained in HACCP?
Yes. The operator must ensure that employees are trained in food hygiene and the application of HACCP principles. Failure to do so can lead to a fine of €100 to €1,000 (Section 28(1) of Act No. 152/1995 Coll.).
What is a food safety culture?
An obligation added to Regulation (EC) No 852/2004 by Regulation (EU) 2021/382. Management must create an environment in which employees know their role in food safety, have the time and resources for it and are not afraid to point out a problem. This includes the correct handling of allergens.
